It was almost like yesterday when I baked my first cake, I
can still remember the way it looked and how soft it felt in the palm of my
hand and the sweet taste registered on my taste buds. I can tell you that
fantastic moment wasn't yesterday it was about 3 years ago. My first cake was a
simple sponge cake but I was so excited that I made it that I nearly fell over
and ever since I've been baking here, there and everywhere since that faithful
day at my university house in hull. That’s a little introduction about me the
Baker of Bermondsey but this blog is all about my baking adventures, I’m just
an amateur baker but I hope this Blog can aspire you and get you to maybe even
bake a little.

For weeks I’ve been searching high and low for the perfect
cookie recipe ever. I am officially the cookie monster, (hides face) I just can’t
seem to get enough of the big five pack ones from Tesco and Sainsburys my 1 st attempt was abysmal,
it was truly awful the cookies just ended up burnt and this put me of them
until I decided to use a betty crocker milk chocolate chip mix which for me
always feels like cheating because your not baking from scratch but it was only an
experiment. I followed the instructions to a T and they came out really nice a
little deformed but tasty. until it hit me why don’t I try to bake these myself.
I decided to check all cooking websites, cook books, TV
programs and even checked my favourite baking blog in the world http://sallysbakingaddiction.com/
(I’m saving this recipe to use soon). I decided to go with the chewy cookie
recipe from BBC Good food. The cookies came out stupendous and now after a
couple of batches I feel very confident making these. Yes!!!!! Another baking
treat I can wipe up.
Tips for a chewy cookie
- · Using an extra egg yolk (As stated in the recipe)
- · Melting the butter (As stated in the recipe)
- · Bake cookies for the minimum amount of time
- · Popping the cookie dough in the fridge for a healthy length of time (1 hour-1 day)
- · Using a teensy bit less flour
